The water decaffeination process is a natural process that does not use any chemical solvent and was uniquely developed by our Mexican partner “Mountain Water Process”. This method uses water from the glaciers of the Pico de Orizaba Mountain to float the coffee oils and caffeine in a solution. It then carbon filters the solution to remove 99% of caffeine, and returns the water soluble oils to the coffee maintaining the coffee’s distinctive origin and flavour characteristics. This coffee comes from the Altura region of Mexico bordering Guatemala. The Sierra Madre mountain range offers both the necessary altitude, as well as beneficial volcanic soil for very good coffee production.
