ORGANIC GUATEMALA QUETZALITO

Notes of cherry, plum, with a buttery mouthfeel and winey on the nose.

This coffee is certified organic, it is produced in the terroir of San Antonio Huista in the famous Huehuetenango region by an association of local producers. The cherries are grown from the Bourbon, Typica, Caturra and Catuai varieties. Most of the farms are located at an altitude of 1,800 metres.
The cherries are selected carefully and harvested, between November 2020 and March 2021 by hand, fermented for 12 hours, left to dry on patios for 8 to 10 days, then processed. This is a new, ultra-clean coffee with a profile characteristic of the terroir and produced using totally organic methods. This is a beautiful example from Guatemala, rich as an espresso and sweet as a filter coffee. One of our absolute favourite origins to source great coffee from.

Coffee plantations in the Huehuetenango region can thrive at very high altitudes of up to 2,000 metres thanks to the hot winds arriving from the Tehuantepec plain in Mexico. Although the soil is calcareous and rocky, shade-grown crops ensure a quality production. Most producers process their coffees themselves. It is one of the best-known regions, a “land of the elders” home to exceptional coffees.
It is also where the San Antonio Huista terroir can be found, surrounding a small town of the same name located in the north, near the Mexican border.
